It has a profound effect on the selection of raw material for a given processing application.
Cultivar and rootstock selection influences;
- composition,
- Quality (color, flavor, taste, texture)
- storage potential,
- Response to processing characteristics that may be inherited. In many cases, fruit cultivars grown for fresh market sale are not suited for processing and vice versa.
