Poultry: Introduction and processing

In this lesson, introduction to the poultry breeds is discussed breifly along with commercial importance of poultry industry in Pakistan. Further more, primary processing of poultry is explained from receiving of poultry bird to the final meat packaging consisting of unit operations like slaughtering, stunning, ageing etc. Lastly, meat inspection and quality control parameters are also discussed
